.. frittatas are easy to make ... once you learn the basis, it´s easy to get your fantasy wild...

A frittata is something like an egg omelette in a hundred ways ...

Frittata with vegetables

For a smaller baking dish: for 2 people (approx. 20x30 cm)

5 eggs

a third of a can with coconut milk (ideally if it is without preservatives, just coconut milk and water) - Alnatura for example

1/2 teaspoon of salt (sea, Himalayan)

1/4 smaller zucchini

half a red pepper

1/4 yellow pepper

half a red onion

6 black olives

1/2 spring onion

Coconut oil for wiping tin, ceramic bowls


We beat the coconut milk, salt and eggs with a whisk.

Pour into a greased tray, ceramic bowl...

Cut the vegetables, the red onion into thin slices.

We arrange everything ... we spread it on the surface, we can press it into the egg mixture with a wooden spoon.

Bake in the oven at 180 degrees Celsius for about 30 minutes.
