
Method:
We will prepare:2 carrots cut into rounds8 pieces of Brussels sprouts (cut off a piece of the lower part, remove the top leaves)50g red lentils - rinsed in cold water2 tablespoons quinoa (instead of browning, to thicken the soup)2 cloves of garlic1 teaspoon ground cumin1 teaspoon salt (sea)1 small onion3 small potatoes1 tablespoon of coconut oila stalk of celery (for decoration) - a few leaves1.5 liters of water
Pour water into the pot, add carrots, Brussels sprouts, potatoes, lentils, garlic, cumin and salt. Let it cook. Rinse the quinoa with hot water - add it to the pot. Fry the finely chopped onion in coconut oil - add it to the pot. Cook until soft, about 15-20 minutes. Finally, garnish with stalks of celery. Serve warm :)
